When professional "Q Graders" (the sommeliers of coffee) evaluate a batch, they aren't asking, "Will this go well with a blueberry muffin on a Tuesday morning?" They are looking for technical variables under strict, laboratory-like conditions. They evaluate:
- Aroma & Flavor: Is it distinct and clean?
- Acidity: Is it bright and vibrant (highly prized in the industry) or flat?
- Body: How does it feel on the tongue?
- Balance: Do the flavors play well together?
- Uniformity: Does every cup taste exactly the same (no "bad" beans)?
- Cleanliness: Is the cup free of defects, mold, or "off" flavors?

Many high-scoring coffees are prized for their "complexity," which often manifests as intense fruitiness or high acidity (think citrus, green apple, or berries). For the "coffee snobs" chasing wild flavor profiles, an 89-point Ethiopian Sidama is a dream. But for someone who wants a smooth, chocolatey, low-acid cup that feels like a warm hug, that same 89-point coffee might taste sour or "thin."
That does not mean the fruity coffee is bad. It simply means taste is personal.

The Hidden Gap: Roast Levels and Processing
Another reason that high-scoring arabica coffee beans might taste "off" to you is the roast level.
- Light Roasts: These preserve the "origin character": the florals, acidity, and delicate sugars. This is where most high-scoring specialty coffees live because it showcases the farmer's hard work.
