It was 1995. I was on a college trip to Costa Rica; my first ever international journey. We were high up in the mountains, the kind of altitude where the air feels thin, crisp, and impossibly clean.

I was handed a single cup of coffee. No cream. No sugar. Just a steaming mug of high-altitude, specialty-grade coffee. Now, I did add sugar since that's what I was used to doing to make my coffee drinkable. But, wow, this was an eye opener when I realized it really didn't need it. Great coffee, naturally sweeter. 

I took a sip, and my world shifted.

It wasn't bitter. It wasn't "burnt." It was smooth, vibrant, and had notes of things I didn't even know coffee could taste like: chocolate, citrus, and a hint of something sweet that I now know was the natural sugars of the Arabica bean. I had to ask the servers what this was. For the first time in my life, I wasn't drinking a "caffeine delivery vehicle." I was having an experience.

That single cup ruined coffee for me for the next 30 years.

The "Lower Alabama" Search

I grew up on the Gulf Coast of Mississippi and largely in southern Alabama: what we affectionately call "LA" (Lower Alabama) around here. Down south, coffee is usually a hot pot of something acidic, often filled with poor-quality beans and, historically, a bit of chicory filler to stretch it out.

After that trip to Costa Rica, I came home and tried to find that feeling again. I spent decades overspending at grocery stores and cafes, trying many trendy shops I could find, and buying bags with beautiful labels that promised the world but delivered nothing but heartburn and bloating.

I just wanted a cup of coffee I could look forward to every single morning that I had back in Costa Rica. I even wanted a decaf for those quiet evening cravings that didn't taste like chemicals or cardboard, or simply charred from over-roasting. Most of all, I wanted to stop feeling like my morning ritual was a trade-off between energy and feeling "off" for the rest of the day.

It Wasn’t Coffee. It Was Them.

For years, I thought my body was just becoming "sensitive" to coffee. I figured the bloating, the mid-afternoon crash, and the acid reflux were just the price of admission for getting older. And I didn't want to give up on it either. I enjoy coffee.

But then, the research started catching up. I began to realize that the "heartburn ritual" wasn't a coffee problem: it was a commodity problem.

Most coffee you find on grocery store shelves: and even in many "fancy" shops: has been sitting in warehouses for months. "Crema" is that golden, silky layer that forms on top of a perfectly pulled espresso shot. It's the visible signature of intentional roasting — the mark of quality, care, and craft in every bag. If you've ever seen a flat, pale espresso with no crema, you know the difference instantly.

"Peaks" represents the pinnacle of flavor. The summit. Coffee at its absolute best through intentional roasting. Not short on flavor — just the opposite.

But the peaks aren't just a metaphor. My family and I spent time in southern Colorado, in Colorado Springs, where we saw Pikes Peak daily — it's called "America's Mountain." That constant presence shaped how I think about standards. The peak is what you aim for, every single day.

I've seen a lot of brands with "Crema" in their name, but most of them are selling the same warehouse-stale commodity beans everyone else is. The name only means something if the coffee backs it up. For us, the name is a destination we're trying to reach with every batch — the point where purity, flavor, and freshness all converge.

My wife and I knew we had to take the leap. We weren't just looking for a business; we were looking for a solution for ourselves and for you.
