Before roasting, "green" (unroasted) coffee is physically inspected. For a coffee to be specialty grade, it must meet incredibly strict criteria regarding defects:
- Zero Primary Defects: This means no black beans, no sour beans, and absolutely no fungus or mold damage.
- Minimal Secondary Defects: No more than five minor defects (like chipped or broken beans) are allowed in a 350g sample.
